Named after the Burgundy region in France, it has a brownish coloured skin and its size is between a nut and a mature apple. It is more mature and more pungent than the summer truffle and is sometimes called the ‘all – purpose’ truffle.  

Species: Tuber Uncinatum

Origin: France and Spain   

Availability: Late summer to early winter  

Application: best to consume raw, grated on a simple pasta or risotto dish
