The Perigord truffle, or queen of French truffles, is the most fragrant and most expensive black truffle. Has anthracite – black skin and covered with fairly regular warts. Its earthy, cocoa and fruity flavour unveils during the cooking process.  

Species: Tuber Melanosporum Vittadini

Origin: Italy, France and Spain   

Availability: Early winter to late winter  

Application: can be cooked over low heat, adding richness to sauces. Great with meats, eggs, pasta, fondue, scallops, and ravioli.
